Calamares

Squid rings dredged, fried fast, and served with a spiced vinegar or garlic mayo. It works because the cooking is short: tender squid or tough squid, nothing in between.

Ingredients

  • 500 g squid, cleaned and cut in rings
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 egg + 1/2 cup cold milk (optional wet batter)
  • Oil for frying
  • Garlic mayo or vinegar with chili

Method

  1. Pat the squid very dry.
  2. Mix flour, cornstarch, garlic powder, salt and pepper.
  3. Dredge the rings in the mixture, shaking off the excess. For a thicker crust, dip in egg and milk first, then dredge again.
  4. Fry in oil at about 180 C for 90 seconds to 2 minutes in small batches, until pale gold.
  5. Drain and salt immediately. Serve with the dips.

Tip. Two minutes, no more. Overcooked squid turns rubbery.
