Ingredients

  • 300 g pork lungs
  • 200 g pork heart
  • 1 onion, chopped
  • 1 head garlic, minced
  • 1 red bell pepper, diced
  • 4 siling labuyo
  • 2 tbsp vinegar
  • 1 tbsp soy sauce
  • 1 cup water
  • Salt, pepper, oil

Method

  1. Boil the lungs and heart in salted water with a splash of vinegar for 40 minutes. Drain, cool and chop into very small cubes.
  2. Sauté garlic and onion in oil until soft.
  3. Add the chopped meat and fry for 10 minutes, letting it brown.
  4. Add soy sauce, vinegar and chili. Pour in the water and simmer until nearly dry.
  5. Stir in the bell pepper, cook 2 minutes more, and season.

Tip. Chop small. The texture only works when the pieces are tiny.
