Ingredients

  • 1 kg pork belly, in slabs
  • 1/2 cup soy sauce
  • 1/4 cup calamansi juice
  • 1/4 cup banana ketchup
  • 6 garlic cloves, minced
  • 2 tbsp brown sugar
  • 1 tsp black pepper
  • Spiced vinegar to serve

Method

  1. Mix soy sauce, calamansi, ketchup, garlic, sugar and pepper. Marinate the pork overnight, covered, in the fridge.
  2. Set up a charcoal grill for medium heat with a cooler zone.
  3. Grill the pork slowly, turning often and brushing with marinade for the first half of cooking. Aim for about 35 to 40 minutes.
  4. Move to the hot zone for the final minutes to char the edges.
  5. Rest 10 minutes and slice across the grain.

Tip. Cook it slowly. Rushing over high heat burns the sugar before the fat renders.
