Ingredients

  • 2 blocks firm tofu
  • 300 g pork (ears, cheeks or belly), boiled and sliced
  • 3 tbsp soy sauce
  • 3 tbsp cane vinegar
  • 1 small red onion, sliced thin
  • 2 spring onions, sliced
  • 2 siling labuyo, sliced
  • 1 tsp sugar
  • Oil for frying

Method

  1. Pat the tofu dry and fry in hot oil until golden on all sides. Drain and cut into cubes.
  2. Make the dressing: mix soy sauce, vinegar, sugar, red onion, half the spring onion and the chili.
  3. Combine the tofu and pork in a shallow bowl.
  4. Pour the dressing over, let it sit for 5 minutes, and finish with the rest of the spring onion.

Tip. Dress it just before serving so the tofu keeps its crust.
